Dark Leafy Greens

Types: Kale, Swiss Chard, Spinach, Turnip Greens, Mustard Greens, Rapini, Collard Greens, Red ad Green Leaf Romaine, Bok Choy, Watercress.

Vitamins/Minerals Content: Vitamins A,C,and K, Folate, Calcium, Potassium, Magnesium, and Iron.

Recipe:

Mediterranean Inspired Kale Salad

4 servings

  • 1 can BPA free chickpeas
  • 2 bunches of kale chopped
  • 1/3 cup of feta cheese
  • 2 tablespoons olive oil
  • 1 clove garlic
  • 1 lemon juiced
  • sea salt and pepper to taste
  • 1-2 tbsp ground cumin
  1. In a bowl combine chickpeas, kale, feta cheese, olive oil, garlic, lemon juice, and cumin. Add sea salt and pepper to taste.
  2. Toss all ingredients together, mix well, and enjoy!
