Recipe:
Mediterranean Inspired Kale Salad
4 servings
- 1 can BPA free chickpeas
- 2 bunches of kale chopped
- 1/3 cup of feta cheese
- 2 tablespoons olive oil
- 1 clove garlic
- 1 lemon juiced
- sea salt and pepper to taste
- 1-2 tbsp ground cumin
- In a bowl combine chickpeas, kale, feta cheese, olive oil, garlic, lemon juice, and cumin. Add sea salt and pepper to taste.
- Toss all ingredients together, mix well, and enjoy!
