Buffalo Chicken Mac and Cheese
Ingredients:
CHICKEN
- 1 cup shredded or sliced cooked chicken
- 2 tablespoons buffalo sauce
MAC AND CHEESE
- 1 box Annies cheddar shells
TOPPING
- ¼ cup cheddar shredded cheese
- ¼ cup blue cheese crumbles
- 1 Tablespoon buffalo sauce
- 1 Tablespoon ranch dressing ( to drizzle on top)
- 1/4c crushed up Annie’s cheddar bunny crackers
Instructions:
- Preheat oven to 350°F
CHICKEN
- Mix chicken and buffalo sauce in a medium bowl, set aside.
MAC AND CHEESE
- In a sauce pan boil 6c water over high heat.
- Stir in pasta and cook for 8-10mins or until pasta is done, occasionally stirring.
- Drain pasta in a colander. While pasta is draining add in the sauce pan 3tbsp milk of your choice ( I used almond milk).
- Next sprinkle in the cheese and mix into the heated milk.
- Add cooked pasta back into the cheese sauce in the pan and mix well.
- Add the chicken in to combine
TOPPING
- In an oven safe skillet add the combined mac and cheese and chicken mixture.
- Top with cheddar cheese, blue cheese crumbs, and crushed up annies cheddar bunny crackers and bake, uncovered, for 5 minutes.
- Then set the oven to broil and let it broil for 3-5 minutes, Be sure to check it. You want the cracker crumbs to be slightly browned.
