Mini Cauliflower Pizzas




1 large head cauliflower, sliced into flat, disc like pieces as shown
2 Tbsps avocado oil, or extra virgin olive oil
pinch sea salt
1/2 tsp garlic powder
1 cup all natural, pizza sauce, or marinara( I used ROAS)
1/2 cups natural mozzarella cheese( I used the miyokos brand of cashew cheese)
nitrate free pepperoni or any meat of your choice ( I used shredded chicken)


Preheat your oven to 400 degrees f. and line a large baking tray with parchment paper.
Place your cauliflower over a large cutting board; using a sharp knife, slice it into 1/2 inch discs as shown in the video.
Brush or spritz cauliflower (both sides) with oil.
Lay flat on a large sheet pan.
Sprinkle with sea salt and garlic powder.
Roast in your preheated 400 f. degree oven for about 10 minutes each side, 20 minutes total, flipping once. We want em’ golden brown, and a little crispy!
Remove from oven.
Heat oven to broil.
Place a tiny dollop of pizza sauce onto the center of each cauliflower bite.
Top with a tiny pinch of shredded mozzarella, and pepperoni.
Place your sheet pan back into the oven & broil for 1-2 minutes until your cheese is bubbly.
Sprinkle with dried or fresh basil.
